Abstract


ABSRACT

 

Ozone is a strong oxidizer as an antimicrobial, as a bactericidal agent and a disinfectant that can be used to ensure microbiological safety of food and has an effect on fish preservation (Khandre et al, 2001; Kim et al, 1999; Hobb et al, 1991). In August 2000, the Food and Drug Administration (FDA) approved the treatment of ozone for food storage in gas and liquid phases (Federal Register, 2001). The purpose of this study was to determine the effect of ozone on the quality of mackerel fish (Rastrelliger sp) based on organoleptic tests on fish with the addition of ice cubes. Furthermore, this study also aims to obtain the optimum concentration of ozone in the air generated using the Dielectric Barrier Discharge Plasma (DBDP) with a simple circuit.The sample used in this study was mackerel fish (Rastrelliger sp) from Tanjung Tiram Fish Port. The treatment in this study was control, combined with water and ice cubes, soaked with ozone water (30 minutes and 60 minutes). All samples were stored in fish fiber boxes which were given ice cubes at the same temperature (10oC-15oC). The quality of mackerel is determined by the results of Organoleptic testing.Results The ozone generator concentration was 75 g / hour at a flow rate of 5 l / min. Ozone is flowed into the water in the sample for 30 minutes and 60 minutes of treatment every day. Based on the results of the organoleptic test, the highest shelf life was obtained for 12 days at 60 minutes of ozone treatment. The quality of mackerel fish (Rastrelliger sp) until the 12th day still meets the Indonesian National Standard as fresh fish, with an organoleptic value of 7.
